During this portion of the Liturgy, that occurs before the blessed and sacred moment in the Liturgy where bread and wine are made into the real Body and Blood of our Lord Jesus Christ, the priest prays while holding his hands high and moving them like the wings of the flying dove over the bread and wine and sings praises to the Lord.

At this moment, the Church along with all the heavenly beings praise the Father, and just as in Luke 3:22, “And the Holy Ghost descended in a bodily shape like a dove upon him, and a voice came from heaven, which said, Thou art my beloved Son; in thee I am well pleased.”
